Sambar Masala.

Used for making the Southern Indian Sambar. Masalas should be stored in dark airtight jars and as a rule improve with a bit of age.

Ingredients

  • 1 cup Channa dhal
  • 3/4 cup Coriander seed
  • 10 dry chillies
  • 1 tspn Black pepper
  • 1/4 tspn Fenugreek seed
  • 1/4 tspn Asafoetida

Method

  1. Dry fry all ingredients except Asafoetida.
  2. Grind all together when lukewarm and store.
