Pepper Steak
This pure Anglo-Indian comes from Patricia Brown's excellent book Anglo-Indian Food and Customs and really demonstrates the fusion of English and Indian cuisine. This will serve 6 people accompanied by a nice crusty loaf and a green salad.Ingredients
- 1kg beef fillet cut into slices
- 2 medium onions sliced finely
- 1 tbsp ginger/garlic paste
- 2 tsp ground black pepper
- 1/2 tsp Garam Masala - Hot Spice blend
- 2 green chillies, slit down their length
- 2 tbsp worcestershire sauce
- 1 tbsp oyster sauce
- Salt to taste
- 1/2 tspn sugar
- 1 cup of hot water
- 2 large green peppers (capsicum) sliced
- 2 medium tomatoes, chopped
- 3 large potatoes, cut into thick slices
- 1 tsp corn flour (optional)
Method
- In a heavy pan, heat oil and fry onions until transparent
- Lower heat and add ginger/garlic paste, pepper, garam masala and green chillies. Fry until spices release their aroma
- Add meat and fry to coat meat with spice mix
- Add sauces, salt and sugar
- Stir in the tomatoes, green peppers and potatoes
- Cover pot and allow to simmer. Check frequently to ensure meat does not stick
- There should be a thick sauce covering the meat. If not, gently reduce or add the corn flour mixed with a little water, to thicken
