Basic Curry Powder

This is a basic curry powder that can be used by itself and as the basis for other masalas. It is not very hot (as in chilli hot) as you can always add more if needed. Quantities are given in weight ratio. After the recipe, a total weight is given. This will give an indication of how much the recipe will make. All you have to do is work in ounces, grammes or whatever to make the mix.
Ingredients
- 24 Coriander seed
- 12 White cummin seed
- 8 Fenugreek seed
- 1 Cardamom seed
- 1 Bay leaves
- 10 Besan flour
- 10 Garlic powder
- 8 Mango powder
- 8 Paprika
- 8 Turmeric
- 8 Garam Masala - Hot Spice blend
- 1 Cloves
- 2 Curry leaves (dry)
- 2 Asafoetida
Total 103.
Method
- Dry fry the Coriander, cummin, fenugreek, cardamom cloves and bay.
- Cool slightly, grind with other spices and store.
For a hotter curry powder add
- 1 Ginger powder
- 1 Chilli powder
- 1 Yellow mustard powder
- 1 Black peppercorns
Add the peppercorns at the dry fry stage.
